Cut from the beef flank, skirt steak is a long, flat piece of meat that’s flavorful and tender if properly cooked. In a hurry? Grill it quickly on the barbeque or in a skillet, then cut on the diagonal. Have some time and want a hassle free meal? Slather it with herbs, roll it up and braise it low and slow in the oven with a little wine or broth. Either way, it will melt in your mouth.
